Gluten Free & Vegan American Style Pancake Recipe



Yippee! It's Pancake Day and this year, after a lot of trial and error I have finally come up with the perfect recipe so, Jasmine doesn't have to miss out and neither do you!


To make these super fluffy, delicious American Style, Gluten Free, Banana Pancakes you will need:

Ingredients for the Pancakes

  • 2 Mashed Bananas

  • 175g gluten free self raising flour

  • 1tsp baking powder

  • 1/2 tsp salt

  • 3 tbsp caster sugar

  • 3 tbsp olive oil

  • 125ml Alternative milk (we used oat milk)

Ingredients for the toppings

  • Maple syrup / honey to drizzle

  • Icing sugar to sprinkle

  • Strawberries quartered

  • Blueberries

  • Or your choice of chopped fruit

Method

  • Mash the bananas in a bowl with a fork until really mushy

  • Sift the in the flour and fold into the banana

  • Add the caster sugar, baking powder and salt into the mixture and mix well

  • Add the milk and oil and pour into the the bowl, mix until you have a smooth batter

  • Once you have the batter gently bang the bowl on the work surface and leave to stand for about 10-12mins so the batter can fill with air bubbles.

  • Heat a frying pan on a medium - low heat and add a ladle of batter

  • Cook both sides until golden brown and serve with topping of your choice
