Packed lunched for a child with multiple allergies and coeliac disease is something I find very challenging to say the least. Trying to maintain a healthy diet and keeping it exciting for a 7 year old is a mission in itself.
Here we have a Gluten Free Pasta Salad, being colourful helps it look a little more exciting!
Recipe
75g Tesco Fusilli Gluten Free Pasta (also Egg Free)
1 handful of Cherry Tomatoes
1/4 Cucumber
1/2 Orange pepper
1/4 small red onion
Salt
Pepper
Olive oil
Method
Boil the pasta according to packet instructions in lightly salted water.
Cut the tomatoes into quarters
Finely slice the cucumber
Finely slice and dice the red onion
Dice and finely slice the orange pepper
put in to a large bowl.
Once the pasta is cooked rinse and drain and allow to cool.
Mix all ingredients into the bowl, drizzle with olive oil and season with salt and pepper to taste.
