Gluten Free Loaf



After a few tweaks, this gluten free recipe is ready to share with you all.


Free From: Dairy Free, Egg Free, Soya Free, Nut Free, Peanut Free


** Vegan Friendly and Coeliac Safe.


Ingredients

  • 500g Gluten free strong bread flour

  • 1 sachet Easy yeast

  • 1tsp Salt

  • 6tbsps vegetable oil

  • 1tbsp caster sugar

  • 400ml water

  • 1tsp Apple Cider Vinegar (make sure gluten free)

  • Egg replacer for 2 egg whites (we used free and easy egg replacer) make following their instructions


Method

  • Prepare a 1kg bread tin with oil and set aside

  • Put the flour and yeast into a large mixing bowl

  • In a seperate bowl mix together the egg replacer, vinegar, sugar, salt, water and half of the oil and whisk together for 5 mins by hand or 1 minute using electric whisk.

  • Add the ingredients together in one bowl and whisk until you get a smooth lump free batter

  • Add the rest of the oil and fold into the batter

  • Pour the batter into the bread tin

  • Cover loosely with oiled clingfilm and leave until the batter rises half way up the tin approx 90mins.

  • Cook in preheated oven at gas mark 7 for 50-60mins

  • Once cooked leave to cool on a wire rack.



Top Tips: to use the next day make sure the bread is wrapped tightly with clingfilm

slice loaf and wrap with damp kitchen roll and put in microwave for 5 seconds to get nice moist fresh bread again.
