This morning I baked the most delicious chocolate chip cookies, perfect to put in my daughters lunch box.
To give them a try yourself follow the recipe below:
You will need
1 large baking tray, lined with parchment paper
Ingredients
200g Plain gluten free flour
150g caster sugar
½ tsp Bicarbonate of Soda
½ tsp Xanthum Gum
A pinch of salt
50ml oil
Egg replacer (equivalent of 1 whole egg, make according to pack instructions)
75g dark chocolate chips
Method
Pre-heat the oven 180°C, Fan 160°C, 350°F, Gas 4
Pour the flour, sugar, bicarbonate of soda, xanthan gum and salt into a bowl and stir well to combine.
Then sieve everything into a mixing bowl.
Next add in the oil, vanilla extract and egg replacer and give it a good mix to form a dry dough and add in the chocolate chips.
Mix the chocolate chips into the dough using your hands.
Form around 12 - 14 dough balls with your hands and slightly flatten before placing on the baking tray. Make sure you leave enough space between each ball.
Put in the oven and bake for around 18minutes or until the cookies are lightly browned on the edges.
Leave to cool for a few minutes before putting them on a cooling rack.
