Free From Choc Chip Cookies


This morning I baked the most delicious chocolate chip cookies, perfect to put in my daughters lunch box.


To give them a try yourself follow the recipe below:


You will need


1 large baking tray, lined with parchment paper


Ingredients

200g Plain gluten free flour

150g caster sugar

½ tsp Bicarbonate of Soda

½ tsp Xanthum Gum

A pinch of salt

50ml oil

Egg replacer (equivalent of 1 whole egg, make according to pack instructions)

75g dark chocolate chips



Method

  • Pre-heat the oven 180°C, Fan 160°C, 350°F, Gas 4

  • Pour the flour, sugar, bicarbonate of soda, xanthan gum and salt into a bowl and stir well to combine.

  • Then sieve everything into a mixing bowl.

  • Next add in the oil, vanilla extract and egg replacer and give it a good mix to form a dry dough and add in the chocolate chips.

  • Mix the chocolate chips into the dough using your hands.

  • Form around 12 - 14 dough balls with your hands and slightly flatten before placing on the baking tray. Make sure you leave enough space between each ball.

  • Put in the oven and bake for around 18minutes or until the cookies are lightly browned on the edges.

  • Leave to cool for a few minutes before putting them on a cooling rack.
